Bite-sized treats
Your dessert table is likely to include staples such as cake pops, bright and sour sweets and doughnut walls, but there are other ideas you can consider for your spring wedding. Warm Belgian waffles topped with fresh cream and strawberries are bound to hit the spot with your guests, especially in the capricious spring weather. Mini pavlovas can be a light bite-sized treat to satiate rumbling stomachs, and they are also available as a vegan alternative by replacing egg whites for chickpeas. Little jars of colourful fruit parfait are a great way of sampling the best produce of the season, and smooth chocolate mousse will satisfy anyone’s sweet tooth.
Cupcakes are a dessert favourite, and there is a plethora of ways in which you can tailor them to the seasons. Decorate cupcakes with edible flowers and a rainbow of colours, or keep it neutral with white icing and minimal decorations for an elegant look.
Think outside the box when it comes to taste. Look to zesty and milky flavours like lime and coconut flavoured cupcakes. You could even have special boozy cupcakes for the adults such as mojito and piña colada.
Of course, no dessert table would be complete with a delectable display of macarons. Ask your caterer to create macarons with spring-themed flavours like lavender, rose, lemon meringue, pistachio and raspberry.

A refreshing pick me up
For a refreshing springtime snack, nothing beats a cool scoop of ice cream or soft sorbet.
“All our delicious ice cream is made on a family dairy farm in Dorset,” says Rebecca Bolton, founder and owner of Treats on a Tricycle. “Not only do they produce the mouth-watering creaminess of real dairy ice cream, but they also create vegan ice cream made from coconut milk and refreshing sorbets. I love knowing that they use the milk from their own cows who graze on their pastures.
“Our most popular flavours to serve currently are strawberry and champagne, salted caramel, and honeycomb ice cream, as well as passionfruit sorbet.”
Fruity delights
Pair your spring desserts with some refreshing cocktails and non-alcoholic beverages. Jugs of elderflower cordial, fresh lemonade, and even pitchers of iced tea are sure to quench your guests’ thirst. Be inspired by spring produce with a rhubarb bellini, a delicious strawberry mojito or an invigorating mint cucumber gin and tonic.
